Embracing this shift, Sun Siyam Iru Fushi has aligned its “Premium Island Experience” with exclusive chef residencies designed to turn a resort visit into a refined and curated sensory journey. This direction reflects the property’s core philosophy of redefining the guest experience across its 15 dining venues and bars.

At the centre of this elevated concept, the resort’s Easter programme introduced a bespoke four-course residency led by Michelin-starred Chef Robin Pietsch. Working in close collaboration with Executive Chef Putu Wijana and Beverage Manager & Sommelier Sunil Kumar, Pietsch crafted each dish to achieve a sensual harmony with its corresponding vintage pairing, highlighting the precision of culinary chemistry. The residency took place at Islander’s Grill, the resort’s beachfront venue, where the “Land & Sea” menu demonstrated technical finesse through signature creations such as Hand-Cut Beef Tartare finished with a silken yolk and garden botanicals; Lightly Cured Cod jewelled with Beluga Caviar; and a succulent Beef Cheek paired with Seared Foie Gras and winter truffle. The experience concluded with a Topfen Dumpling accented by papaya, yogurt, and almond.

The menu was complemented by curated pairings, including French Champagne alongside a selection of prestigious French and Italian wines.
