Amilla Maldives has officially welcomed Executive Chef Sean Derrick Walles, an accomplished culinary professional with more than 18 years of international experience. Known for his refined approach to mindful gastronomy, Chef Derrick joins the island resort following leadership roles at several of the world’s most prestigious destinations, including Alila Villas Uluwatu in Indonesia, Soneva Fushi, Patina Maldives, Velaa Private Island, Six Senses Zighy Bay in Oman, and Six Senses Douro Valley in Portugal.

Throughout his career, Chef Derrick has earned recognition for his inventive plant-based fine dining, highlighting locally sourced and sustainably grown ingredients. His philosophy emphasizes respect for nature’s produce while delivering dishes that are both memorable and environmentally conscious. His dedication to craftsmanship and innovation has earned him numerous accolades, including Gold and Silver Medals at the Hotel Asia Culinary Challenge (Maldives) and the FHA Culinary Challenge (Singapore).

At Amilla Maldives, Chef Derrick’s culinary direction aligns perfectly with the resort’s guiding ethos of “In Harmony with Purpose.” General Manager Morgan Martinello expressed enthusiasm about the appointment, noting that the chef’s values of sustainability and creativity strengthen the resort’s commitment to responsible hospitality. “His dedication to fresh, locally sourced ingredients and plant-forward artistry enhances every dining experience,” Martinello said.

Guests will soon experience Chef Derrick’s innovative influence across the resort’s seven restaurants, three bars, wine cellar, and garden pop-ups. The refreshed menus will feature an array of vegetarian, vegan, low-carb, and gluten-free dishes, along with personalized meal plans tailored to individual preferences.
